 Gujarati Thin Crispy Puris Recipe

Ingredients:

· 1 and 1/2 cup Multigrain Flour

· 1 and 1/2 cup All purpose Unbleached Flour

· 1 and 1/2 cup Mathiya Flour

· 1 cup Rice flour

· 1/4 cup Ghee or Melted butter

· 1/2 cup oil

· 3 tsp salt

· 3 to 4 tsp black coarse pepper

· 2 tsp red chille powder

· 1 and 1/2 cup warm Water

· Deep Frying Oil

Steps:

1. Mix all flours together. Add oil, ghee, salt, black pepper, and Chili powder. Mix it well and slowly add warm water and mix and make dough. Divide Dough in 4 parts, knead, and roll them (As illustrated above). Keep it out for 15 minutes.

2. Cut the roll into small pieces with pair of scissors and press them.

3. Roll them into thin puri and make a cut across in the middle (3 cuts without breaking the puri).

4. Place paper napkins in a large flat pan (Preferably pizza pan).

5. Deep fry 2 or 3 puri at a time. Take it out when it turns light pink color. You may need to flip couple times so it cooks evenly. Spread out the puris on flat pan until it cools down.

6. Store this Puris in a tight container. Take them out, as needed. It tastes great with Tea, Coffee, or Milk. Enjoy with Tea, Coffee or Milk!
