Ingredients:

For white garlic potatoes:

· 4 small white potatoes

· 1/4 cup Greek Yogurt

· 1 tbsp dry Oregano

· 1 tbsp garlic, minced

· 1 tbsp virgin olive oil

· Salt to your taste

For purple garlic potatoes:

· 4 small white potatoes

· 1/4 cup Greek Yogurt

· 1 tbsp dry Oregano

· 1 tbsp virgin olive oil

· 1 tbsp garlic, minced

· Salt to your taste

For Salad:

· 9 oz Romaine Lettuce, chopped

· 10 oz grape tomatoes, half sliced

· 1/2 cup Cucumber, half sliced

· 1/4 cup red onions, long sliced

· 1/4 cup Green Bell Peppers, long sliced

· 1/4 cup Greek Black olives, sliced

· Few Green Olives without seeds

· 1/4 cup Pepperoncini Peppers, round diced

· 1/8 cup Green Onions, finely chopped

· 1 packet Feta cheese, medium rectangle shaped

For Greek Style Garlic Lemon Dressing:

· 1/2 cup Virgin Olive oil,

· 1/4 cup white Vinegar

· 2 tbsp Dijon Mustard

· 1 tsp fresh lemon juice

· 1/2 tsp garlic, minced

· 1 tbsp Feta cheese, crumbled

· 1 tbsp dry Greek Oregano

· 1 tbsp Virgin Olive oil for garnish

· ½ tsp black peppers for garnish

· Salt to your taste

Steps:

To prepare the garlic potatoes:

1. Wash and steam both white and purple potatoes.

2. Take the skin off from the white potatoes, place the white potatoes in a one bowl, mash.

3. Now, add the ingredients for the white potatoes, mix well.

4. Take the skin off from the purple potatoes, place the purple potatoes in another bowl, mash.

5. Now, add the ingredients for the purple potatoes, mix well.

To prepare Greek Style Garlic Lemon Dressing:

1. In a small bowl, mix all ingredients for the Garlic Lemon Dressing except 1 tbsp olive oil and black peppers.

2. Drizzle 1 tbsp olive oil over dressing, sprinkle black peppers.

To arrange the Salad Platter, serve:

1. In a large platter, layer Romaine lettuce.

2. Scoop white potatoes and purple potatoes in the center as displayed in a picture. Hint: Use Ice Cream Scupper.

3. Arrange the tomatoes in a circle, around the potatoes.

4. Arrange the cucumber in a circle around tomatoes.

5. Arrange the green bell pepper and red onions in a circle around the cucumber.

6. Arrange the pepperoncini pepper and Greek cube cheese as shown in the picture.

7. Now, place the black olives and green olives as shown in a picture.

8. Garnish with green scallions.

9. Drizzle the Garlic Lemon Dressing over Salad before serving. Keep extra dressing on the side. Enjoy!
