Ingredients:

Ingredients for the 1st Layer – Mexican Refried Beans with onions and bell peppers:

  • 16 oz can Refried Beans

  • ¼ cup sweet Onions, finely chopped

  • ¼ cup Green Bell Peppers, finely chopped

  • 1 tbsp Cilantros, finely chopped

  • 1 tsp Garlic, minced

  • 2 tbsp Picante hot sauce

  • 1 tbsp Taco seasonings

  • 2 tbsp Virgin Olive Oil

  • Salt

Ingredients for the 2ndLayer – Thai Red Curry Creamy Dip:

  • 12 oz Sour Cream

  • 8 oz Cream Cheese

  • 3 tbsp Thai Red Curry Paste

  • 1 tbsp Red Thai Chili, ground

  • Salt

Ingredients for the 3rdLayer - Mexican Black Beans and Corn Salsa with Pepper Jack Cheese:

  • 8 oz canned corn

  • 16 oz canned Black Beans

  • 2 Tomatoes, finely chopped

  • 1 Onions, finely chopped

  • 1/2 cup mix of red, yellow, and orange sweet peppers, finely chopped

  • 2 Jalapeños, finely chopped

  • 1/2 cup Pepper Jack Cheese Stick, small cube

  • 1/3 cup Cilantro, finely chopped

  • 1 tbsp garlic, minced

  • 1 tbsp white vinegar

  • 1 tbsp Virgin Olive Oil

  • 2 tbsp onion powder

  • 1 tsp squeezed Lemon Juice

  • Salt

Ingredients for the 4th, 5th, 6th, 7th, 8th, 9th Layers:

  • 8 oz Mexican shredded cheese

  • 1 to 2 cup lettuce, finely chopped

  • 1 cup tomatoes, finely chopped

  • 1 to 2 cup bean sprouts

  • 1 cup black olives, sliced

  • 1/8 cup cilantros, finely chopped

  • 1/8 cup green scallions, finely chopped

  • 1/8 cup fresh Basil, preferably Thai Basil

Ingredients for the 10thLayer – Spicy Roasted Peanuts:

  • 1 cup Peanuts, without skin

  • 2 tbsp Water

  • 1/2 tsp Paprika Chili Pepper

  • ¼ tsp Cayenne Pepper

  • 1 tsp Oil

  • Salt

Steps:

Steps for the 1st Layer – Mexican Refried Beans with onions and bell peppers:

1. Heat the large pan with the olive oil, stir fry the garlic, onions and green peppers over medium heat until onions are tender.

2. Continue to stir, add refried beans, Cilantros, Picante sauce and Taco seasoning mix, mix well.

3. Adjust the salt.

4. Let the mixture cool down.

Steps for the 2ndLayer – Thai Red Curry Creamy Dip:

1. Take Sour Cream and Cream cheese from the refrigerator to room temperature.

2. Combine sour cream, cream cheese, Thai Red Curry Paste, and Thai Red Chili in a mixing bowl.

3. Adjust the Salt and Chili according to your taste.

Steps for the 3rdLayer - Mexican Black Beans and Corn Salsa with Pepper Jack Cheese:

1. Drain and dry the corn on a paper towel.

2. Drain the liquid from the canned black beans.

3. Combine corn, black beans, tomatoes, onions, colored sweet peppers, jalapenos, pepper jack cheese, cilantros, garlic, vinegar, olive oil, onion powder, lemon juice, and salt to your taste. Mix well.

4. Adjust the salt and lemon to your taste.

5. Refrigerate.

Steps for the 10thLayer – Spicy Roasted Peanuts:

5. In a microwaveable plate, Combine peanuts, water, oil and salt. Spread them evenly and microwave them for two to three minutes until the peanuts are cooked 3/4 of the way.

6. Then, rub it with Paprika and Cayenne Red Chili Pepper. Microwave them again for another minute, let it cool down!

7. Use this spicy roasted peanut for garnish.

Steps to arrange the layers of this dip:

1. Use a 10- or 12-inch Glass Baking pan to layer the dip.

2. Spread the 1st layer of Mexican Refried Beans with onions and bell peppers evenly.

3. Spread the 2nd layer of Thai Red Curry Creamy Dip evenly.

4. Spread the 3rd layer of Mexican Black Beans and Corn Salsa with Pepper Jack Cheese

5. Spread the 4th layer of Mexican Cheese.

6. Spread the 5th layer of the Lettuce.

7. Spread the 6th layer of the tomatoes.

8. Spread the 7th layer of the Bean Sprouts

9. Spread the 8th layer of the Olives.

10. Spread the 9th layer of the Cilantro, Thai or Sweet Basil and Scallions.

11. Spread the 10th layer of spicy roasted peanuts.

12. Best served with fried or baked Wonton, White Tortilla and Corn Tortilla chips.
