Gujarati Badam Magas Recipe

Ingredients:
· 1 cup coarse chickpea flour (Ladu Mix)
· 1 cup fine chickpea flour (Gram flour)
· 2 cup Ghee
· 1 cup coarse almonds
· 1 cup sugar
· 1 tbsp milk
· Pinch of Saffron (Kesar)
· 2 tsp Cardamom powder (Use 1 tsp for garnish)
· Pinch of nutmeg powder
Slick almonds for garnish
Steps:
1. Grease the 8X8 deep pan with about 1 tbsp melted ghee. Prefer to use corning ware or glassware pan.
2. In a large deep sauté pan, melt the ghee at medium level. Add almonds and chickpea flour, continue to stir until light golden brown.
3. While continue stirring, Add sugar, 1 tsp cardamom powder, and nutmeg powder. Hint: You may have to add extra ghee if the mix appears too thick.
4. Transfer the mixture into pan and spread it equally. Hint: By shaking the pan will help to spread evenly.
5. Garnish with sprinkle of Cardamom powder and slice of almonds. Keep it at room temperature for an hour, cut into small pieces. After few more hours, use flat specula to remove them, transfer them to air tight container.
6. Store leftover Magas in a refrigerator.
