Gujarati Style Spicy Garlic and Ginger Pickle Recipe

Ingredients:
5 cup Mangoes, medium chopped
. 21/2 cup clove garlic
. 1 lb of ginger, peeled
. 3 cup oil, divide
. 1/2 cup Kashmiri Chili powder
. 1/8 cup hot red Chili powder
. 1 tsp Mustard seeds
. 6 whole cloves
. 1 Cinnamon stick
. 3 dry whole red chilies
. 1/4 tsp Asafetida
. 1 tsp salt
Steps:
In a food processor, grind garlic with 1 cup oil into coarse mixture.
Use Blender or Smoothie cup machine to grind the ginger with 1 cup oil until the mixture is smooth.
Heat 1/4 of an oil in a deep pan, add Mustard seeds and asafetida to give Tadka. Add cloves and cinnamon sticks and whole red chili; Sauté them for a couple of seconds.
Add the mixture of garlic, ginger and salt. Sauté the mixture over medium heat until the garlic is light pink, Stir occasionally.
Turn the heat off. Let the mixture cool down.
Add both Chili powder, mangoes, and remaining oil; mix well.
Adjust the salt to your taste.
Transfer the pickle into a bottle. Hint: Add an extra oil on top to preserve the pickle.
Refrigerate the pickle.
