Gujarati Style Sun Dried Hot Long Chili Peppers Recipe

Ingredients:
For the Sun Dried Hot Long Chili Pepper:
100 long Chili peppers
1 cup Ajwain (AKA Ajmo), crushed
1/2 cup salt
For the Deep Frying:
8 Dried Long Chili Pepper
4 cup oil
Steps:
To Sun Dried Long Chili:
1. Wash the chilies and dry them out.
2. Use sharp knife to slit the chili in the middle across from one end to another end without separating it. Repeat the same steps for each chili pepper.
3. Mix Ajwain and salt in a small bowl.
4. Fill each chili with the mixture of Ajwain and salt.
5. Place the plastic on the table under the sun.
6. Spread out chili in a single layer on the plastic table. Keep them under the sun throughout the day. Bring them inside the house at dawn. Repeat this step until the chili dries out into brown color. Hint: Turn the chili in between middle of the day to make them dry faster.
7. Store dried chili in a Jar or Ziplock bag.
8. Refrigerate until ready to use some of it.
To fry the dry chili and serve:
1. Heat the oil over medium heat.
