Indian - Gujarati Style Ladva Recipe

Ingredients:

· 1 cup Wheat flour

· 1 cup Semolina flour (Rava Flour)

· 1/2 cup All Purpose White flour, unbleached

· 3 cup powder sugar

· 1/2 cup oil for dough

· 1 cup warm water

· 1 cup ghee

· 2 tsp cardamom

· 1/2 tsp nutmeg powder

· 1/2 cup poppyseeds

· 3 to 4 cup oil for frying Muthia, About 2-inch Oval shape

Steps:

1. Mix all wheat, Rava, and All-purpose White Flour together with oil. Slowly add the warm water and make a dough, smooth as possible. Divide Dough into several small oval shape to make Muthia. Hint: Make each one about 2-inch into oval shape. Don’t make them too thick!

2. Heat the frying oil at medium heat, deep fry few Muthia at a time until they turn pink color. Repeat this step until all of them are fried thoroughly. Break them in half and let it cool down for about 20 minutes.

3. Use food processor to grind the Muthia into a coarse mixture; Use coarse strainer (“Charni” in Gujarati) to take the mixture out in a large bowl; re-grind if there are any large chunks. Repeat this step until the chunks are grinded.

4. Add Ghee, cardamon, nutmeg powder, and sugar; mix well. Adjust sugar according to your taste.

5. Take small dish with poppyseed.

6. Make one ladva round shape using small mold; immediately transfer and roll the ladva with poppyseed. Hint: At this point, you may need to add more Ghee, if needed. Transfer to large plate and keep them in a single layer. Repeat the same step for the remaining mixture.

7. Enjoy this sweet with Gujarati Meal!
