Ingredients:

· 1 cup Celery, finely sliced

· 1/2 cup Carrots, finely chopped

· 1/2 cup Cauliflower, finely chopped

· 1/2 cup sweet red, yellow, and Orange peppers, finely chopped

· 1/4 cup Serrano Peppers, finely chopped

· 1/2 cup green olives, finely chopped

· 1/2 cup Green Peppers, finely chopped

· 1/4 cup garlic, finely chopped

· 1/2 cup Pepperoncini peppers, finely chopped

· 1/4 cup dry red chili flakes

· 2 Bay leaves

· 1 tbs dry Oregano

· 1 tbsp fresh Oregano

· 2 tsp dry coriander seeds

· 2 tsp Fennel seeds

· 1and1/2 cup Virgin Olive Oil

· 1 cup white vinegar

· 1 tbsp lemon juice

· Salt to your taste

Steps:

1. In a large bowl, combine all the ingredients as shown in the picture, mix well.

2. Taste and Seasoned with salt. Adjust the hot peppers according to your taste.

3. Store in a two small Jar with thin layer of extra olive oil, to preserve the freshness.

4. Take out little at a time, bring it to room temperature before serving.
