Italian - Classic Minestrone 16 Beans Basil Soup Recipe

Ingredients:
For preparing beans (Soak and pressuring):
1 cup dried 15 bean soup mix
2 cups water to soaking 15 dry beans
¼ cup potatoes, chopped
2 cups water to pressuring 15 dry beans
Salt to your taste
For making a soup:
3 tbsp Olive oil (Hint: Use Light Olive Oil)
4 garlic cloves, minced garlic
¼ cup Onions, finely chopped
¼ cup Mini Sweet Peppers (Red, Yellow and Orange), finely chopped
1/4 cup Green Bell Pepper, finely chopped
1/3 cup Celery, finely sliced
1 tbsp dry parsley
1 tbsp fresh Oregano, finely chopped
1 tbsp fresh Basil, finely chopped
1 tsp Thyme dry powder
2 pieces Bay Leaves
1 tsp Cayenne Pepper
¼ cup Zucchini, finely chopped
¼ cup carrots, finely chopped
¼ cup French beans, small chopped
¼ cup small shell pasta
1 cup Vine Ripe tomatoes, finely chopped
1 cup vegetable broth
2 cups water to liquidate the soup
8 oz can Garbanzo Beans cooked
1 tbsp fresh Basil for garnish
Salt to your taste
Steps:
To soak and cook 15 dry beans:
Soak dry beans filled with 2 cup of water for at least 6 to 8 hours.
Wash and drain the water from the soaked beans, add the soaked beans, potatos, 3 cup of water and salt into pressure cooker or an instant pot.
It usually takes about 5 to 10 minutes to cook depneding on the pressure cooker or an instant pot settings.
Let it depressurize.
To make the soup:
In a large deep sauce pot, heat the oil over medium heat. Add the garlic, sweet peppers, bell peppers, onions, bay leaves, parsley, thyme, oregano, basil, and cayenne pepper stir occasionally until onions are softened.
Add zucchini, celery, carrots, and french beans. Saute the vegtables for couple more minutes, continue to stir.
Add pasta, tomatoes, cooked 15 beans including liquid, garbanzo beans, vegetable broth, and 2 cup water. Stir and continue to simmer until vegetables are tender. Hint: Cover the pot to have the vegetable cook faster.
Add more water or vegetable broth if you like the soup little thinner. Add salt to your taste.
Garnish with fresh basil right before serving the soup.
