Italian Spicy Meatballs with Marinara Sauce Recipe

Ingredients:
For Spicy Marinara Sauce:
· 1/2 cup onions, finely chopped
· 2/3 cup celery, finely chopped
· 1/4 cup red bell peppers, finely chopped
· 8 cloves garlic
· 28 oz canned peeled plum tomatoes
· 1/2 cup Virgin Olive oil
· 1 tbsp fresh Oregano
· 1 tbsp Cayenne peppers
· 1 tsp ground black peppers
· Salt to your taste
For Spicy Meatballs:
· 1 lb chuck Ground beef
· 1 cup Italian bread
· 1/4 cup tomatoes paste
· 1/4 cup onions, finely chopped
· 1/4 cup celery, finely chopped
· 1/4 cup Carrots, coarse chopped in food processor.
· 1/4 cup red sweet peppers finely chopped
· 5 cloves garlic, minced
· 2 Eggs
· 1/8 cup Parmesan and Romano grated cheese
· 2 tbsp crushed chili peppers
· 1 tsp Oreganos
· 1 tsp Thymes
· 1 tsp parsley
· 1 tsp black peppers powder
· 1 tsp Cayenne Peppers
· 1 tsp fennel
· 2 tbs Olive oil
· 1 tsp vinegar
· Salt to your taste
Steps:
To make Marinara Sauce:
1. In a sauce pot, stir fry onions, celery, red bell pepper and garlic with olive oil over medium heat until onions are tender.
2. Add the tomatoes, oregano, cayenne pepper, black pepper and salt; continuously stir for another minute.
3. Transfer the mixture into food processor; pulse until tomatoes are crushed.
4. Bring the sauce back to pot; occasionally stir and let the sauce simmer for few minutes.
To make meatballs and serve with Marinara Sauce:
1. In a medium pan, add oil; stir fry garlic, onions, carrots, green peppers, celery, fennel and salt to your taste over medium-high heat until carrots are tender.
2. Reduce the heat, add tomato paste, vinegar, oreganos, thymes, parsley, crushed peppers, and cayenne peppers, mix until combined.
3. Let the vegetable mixture cool down.
4. Pre-heat the oven to 400 degrees.
5. In a separate bowl, combine the ground beef, eggs, bread crumbs, Parmesan cheese and the vegetable mixture, mix well, to form a ball as shown in the picture.
6. Place them individually in a single layer on baking rack with the pan, bake them until meatballs cooked thoroughly. It usually takes about 20 to 25 minutes. You may want to turn the meatball once and cook them for 5 minutes longer.
7. Put marinara sauce over meatballs. Enjoy!
