Mexican - Black Beans and Corn with Pepper Jack Cheese Salsa Recipe

Ingredients:
For Salsa Seasoning:
· 1 tbsp onion powder
· 1 tsp dry Cayenne Pepper
· 1/2 tsp garlic powder
· ¼ tsp Cloves Powder
· 1 tsp dry parsley
· Salt to your taste
For Salsa:
· 6 oz Canned Corn
· 1 cup Black Beans, cooked
· 2 Tomatoes, finely chopped
· 1 Onions, finely chopped
· 1/2 cup mix of Red, yellow, and orange
· 1/2 cup mix yellow, red and Orange Bell Peppers, finely chopped
· 4 oz Canned Fire roasted petite tomatoes
· 2 Jalapeños, finely chopped
· 1/2 cup Pepper Jack Cheese, small cubed
· 1/3 cup Cilantro, finely chopped, divide; keep some for garnish
· 1 tbsp garlic, minced
· 1 tbsp white vinegar
· 1 tbsp Virgin Olive Oil
· 1 tbsp squeezed Lemon Juice
· Salt to your taste
Steps:
1. In a small bowl, mix all Salsa Seasoning together.
2. In a large bowl, add Salsa Ingredients one-by-one and Salsa seasoning to your taste, mix well.
3. Taste and season with salt and lemon juice to your taste. Garnish with fresh cilantros.
